Pollo a la Brasa, better known as Peruvian Rotisserie Chicken, is one of the signature dishes at Viva Chicken. Opened in October 2017, the Waverly location is now serving this nutritious, healthy, and beloved dish for dine in or carry out. This is the 9th location that founders Randy Garcia and Bruno Machiavello have opened and three more are scheduled to open throughout Charlotte in 2018.
Brenda Tanus, Social Media and Marketing Coordinator for Viva Chicken, explains how the founders came up with the idea for Viva Chicken. “Viva Chicken represented a real roll of the entrepreneurial dice for Macchiavello, and co-owner, Randy Garcia. The pair worked together at Garcia’s family’s restaurant, the iconic Charlotte Italian fine dining favorite Villa Antonio, but they had a dream of introducing North Carolinians to the Pollo a la Brasa that Macchiavello grew up eating in Peru and Garcia discovered on a trip home with his Peruvian wife. The gamble paid off, and Charlotte food writers regularly sing the praises of Viva Chicken’s flavorful menu and speedy, friendly service.”
The Waverly location is open and bright with a beautiful covered patio. After you place your order, you are handed a table card while your meal is prepared and brought to you. Viva Chicken is also well known for their three Signature Sauces: Aji Amarillo (Yellow Sauce) made with Yellow Peruvian Pepper; Huacatay (Green Sauce) made with Fresh Cilantro and Jalapeño; Rocoto (Orange Sauce) made with Red Peruvian Hot Pepper. And don’t forget about Viva Chicken’s dessert options. Alfajores are shortbread cookies filled with dulce de leche and covered with powdered sugar, Churros are fried and filled with caramel before being coated in cinnamon and sugar, and their Tres Leches cake is a white sponge cake soaked in three different types of milk.
